My kids, like many others around the country, went back to school this week. It’s been a swirl of mixed emotions for me. On the one hand, I’ll miss our lazy days together, but on the other, we all thrive with some routine. I know I’m more balanced when I get a little time to myself. I’m excited to get back into my yoga and workout mornings, and having time to work during the day, rather than at 5am. With the back-to-school season comes lunch packing.

I know we can all use more ideas for packed lunches, whether it’s for work or school. So I wanted to share four of my go-to tortilla wraps. You can use tortillas or lavash, although lavash is my family’s preference taste wise. These wraps all take just a few minutes to prepare and are filled with nourishing veggies or fruit. The options for wrap fillings are endless, but here are four ideas to get you started.

My girls started eating these peanut butter and banana wraps when their preschool started serving them for snack. It’s definitely a preschooler favorite. You can use any nut or seed butter your family likes. If I have homemade chocolate almond butter around I’ll even use that sometimes. Please remember to cut round foods like grapes and cherry tomatoes in half lengthwise for small children. If there are any children with nut allergies in your kids’ classes, please don’t pack them in lunch boxes.

Once we’ve got our wraps rolled up and into the lunch boxes, we can supplement with other snacks. I typically try to create a balanced lunch by including fruit, veggies, protein and healthy fats. I also love to add a kid-favorite snack likeHorizonfruit snacks, grahams, or crackers. They don’t contain any artificial colors or flavors and my kids (and husband) get really excited. Sometimes the extra fun treats make the difference between my kids asking for school hot lunch and wanting lunch from home, which I prefer.

This easy lunch is made with the Mediterranean wrap, Horizon organic peanut butter sandwich crackers, kiwi, watermelon, blueberries, and a few Horizon fruit snacks. Four tortilla wrap ideas for lunch at home or on the go.

Ingredients

Banana Wrap

  • 1 tortilla
  • 2 tablespoons favorite nut or seed butter (seed butter for no-nut schools)
  • pinch of hemp hearts
  • 1 peeled banana

Mediterranean Wrap

  • 1 piece lavash flatbread or tortilla
  • 2 tablespoons favorite hummus
  • 1 Persian cucumber, sliced
  • 1 Roma or plum tomato, sliced crosswise
  • 1/4 avocado, sliced
  • 1/4 cup balala salad or drained chickpeas
  • 1 cup baby lettuce
  • 1/4 cup pitted and halved kalamata olives (optional)
  • 1 tablespoon favorite vinaigrette

Tex-Mex Wrap

  • 1 tortilla
  • 2 tablespoons guacamole or smashed avocado with lime juice and salt
  • 1/4 cup cooked quinoa
  • 1/4 cup drained black beans
  • 2 tablespoons corn kernels
  • 1/2 cup favorite lettuce or sliced cabbage
  • 2 tablespoons prepared salsa

Rainbow Wrap

  • 1 piece of lavash or tortilla
  • 2 tablespoons favorite hummus or herb cream cheese
  • 1/4 cup shredded purple cabbage
  • 1/2 tomato, sliced
  • 1/4 cup shredded carrot
  • 1/4 yellow bell pepper, thinly sliced
  • 1/4 cup shredded lettuce (I used Romaine)
  • 1 tablespoon favorite vinaigrette

Instructions

  1. Place your tortilla or lavash on a cutting board. Spread the second ingredient (hummus, nut butter, etc.) over one side of the tortilla/lavash. Top with the remaining ingredients and roll up. Enjoy now or refrigerate for lunch.
